I think I did it everyone: I found a way to fix @signal.org post unfurls looking bad
tl;dr signal uses image size to determine presentation style, and we were using 1000x1000px images in the og:image tag for avatars, so it always used the large mode. switching to 128x128px avatars should fix it!
